then try Tahoe installer
I think your USB mapping is not good (i know in sequoia it seems it works..but it is not well done (IMHO))
I have disabled XHCIPort limit quirk which in the past was useful to explode all USB over the limit of the controller , but it is not working in Tahoe and whe a good mapping is done you have to disable it
I am not expert in this field (usb mapping, but someone more expert could correct me in case i was totally wrong)

you can use hackintool to do one for your system

Overwite both kext and config and try both OS you have (Tahoe installer and Sequoia hd)

I have enabled blutootfixup kext because i deactivated it before...but if you dont have a bluetooth mouse it is weird that in sequoia your previous configuration does not work
then i have to understand why you have three kexts for usb mapping in your working config (in sequoia)

ich erstelle mir gerade einen usb stick für tahoe 26, die whatevergreen habe ich jetzt in der efi deaktiviert
das usbPort mapping habe ich komplett neu gemacht und müsste jetzt auch passen
und alles andere müsste passen ja ich stelle jetzt meine aktuellste EFI mal rein die auch mit Sequia funktioniert

I started from you previous sequoia EFI
I modified
1)kernel patches
2)kexts order (also updating bootloader and kexs)
3) bootarg
4) sip
from bootloader menu click on reset Nvram icon
then choose you installer icon (after the system has rebooted)
use this EFI and see if you reach Installation menu
first backup your EFI in a safe place

if so are you able to update only kernel patches in your config.plist?

Are you able to edit your config.plist in some way?
if so:
1) if this EFI was good for booting Sequoia OS for Tahoe you MUST update Kernel / patch Section from link posted some page ago or using the patches i did for you in latest EFI
2) as Karacho noted you use a weird Sip value (not useful for AMD cpu or intel )then also amfipassbeta bootarg that is obsolete using a kext i see in your folder* (AMFIPass kext 1.4.1
* This kext was useful if you use wifi netwrk or similar for OCLP app
3) Sequoia USB mapping could not work in Tahoe and also XHCIPortLimit quirk could fail, so you must update
4) also wifi and ethernet you used in Sequoia could fail.So better create a full installer stick than a recovery installer
so a couple of additional questions
Are you using a full installer or a recovery installer?
Have you also your previous sequoia installation working in your system?
Are you sure that your bios settings are not changing in these multiple tries you are doing from a bit?

3. ich habe den usb Stick schon formatiert und neu aufgesetzt
4. das usb Mapping ist perfekt
It could be my age.......
(or maybe the different language)but in your opinion..if your steps are perfect..Why your system does not boot well for now?
If you like try to read above the message i have edited and try to use the EFI you did for a working sequoia only updating kexts, bootloader and AMD Kernel patches

Charon233 as expert mods said, opening different discussion is not good because people who tries to help must search on other threads all the tries we are doing to have this pc working
Now, some questions:
1) how do you create your USB installer (if you are installing from an USB sticks as in the past)
2) Is it the same disk where you installed before? if so how do you format this? guid/APFS or how?
3) Have you tried to do from scratch the USB installer?
4) USB mapping is a task that only the owner of this PC could do. if it is not perfect it could happen that during installetion steps system looses USB ports and it could have weird behaviour
I wouldnt add others variables as beta opencore version before you win this challenge with your hardware

macOS Installation auf ASUS B550 CREATOR mit Ryzen 7 3700X & RX 5700XT
with a sequoia working conditions (EFI,Bios parameters) usually is pretty simple to update to Tahoe Os

you can use it if before you tried it you had those two bios option set in wrong way (serial and CSM)

USB kexts are enabled?
Have you in your motherboard bios an option like 4G or UEFI?
are they set On?
If so you could delete npci=0x2000 bootarg
Have you tried also with kext i did (modified whatevergreen for tahoe on)?
AMD kernel patches are proper now.
I think problem are on USB mapping and Bios setting
I think also that some user with your seme deutch language could help better than me now
